Add butter, brown sugar, and maple syrup to a microwave-safe bowl. Microwave for 1-2 minutes until sugar is dissolved. Stir to combine.
Lightly grease a 9x13-inch baking pan with cooking spray.
Spread brown sugar mixture evenly in the bottom of the prepared pan.
Arrange the bread cubes in a single layer over the brown sugar mixture.
In a bowl, whisk together eggs, half-and-half, vanilla, and salt.
Pour egg mixture evenly over the bread cubes.
Cover baking pan and refrigerate overnight, 8-10 hours.
Remove pan from refrigerator, uncover, and place in cold oven.
Preheat oven to 350°F. Once preheated, bake 30-35 minutes until bread is golden brown and syrup is bubbling.
Serve immediately with sweetened whipped cream and fresh berries.
