Ingredients

  • 3 large russet potatoes washed and dried
  • 1 tablespoon vegetable canola or olive oil
  • Salt and pepper
  • 2 cups shredded cheddar cheese
  • 6 slices bacon cooked crispy and crumbled
  • 1 tablespoon Italian herb seasoning
  • 2 green onions diced

Instructions

  • Preheat the oven to 375°F.
  • Slice the potatoes into 3⁄4-inch thick rounds.
  • Place the potato slices on a baking sheet in a single layer. Brush both sides lightly with oil and season with salt and pepper.
  • Bake for 25 minutes, until lightly browned.
  • Remove from oven and brush potato slices with bacon drippings. Return to oven and bake 10 minutes more.
  • Remove from oven and top potatoes evenly with cheddar cheese and crumbled bacon.
  • Bake for 5 more minutes, until cheese is melted.
  • Remove from oven, sprinkle with Italian herb seasoning and green onions.
  • Serve immediately with sour cream for dipping.
