Italian Pasta Salad


  • 1 lb. Shell Pasta
  • 5 oz. mini pepperoni
  • 1 avocado
  • 8 oz. grated cheddar cheese
  • 1 pint grape or cherry tomatoes
  • ½ cup sliced green olives
  • ¾ teas.salt
  • 1 teas. lemon pepper
  • 1 cup Italian Dressing


  • Cook pasta to al dente. Drain and set aside to cool. Cut tomatoes in half, cut avocado in squares, add all ingredients into a large serving bowl, add pasta and mix. Then add ¾ cup of Italian dressing and toss. Let set in refrigerator for about an hour, then before serving add the rest of the dressing. Remember salt and pepper may vary according to taste.
