I love making loaf cakes because they are simple to put together, taste great and the perfect size for my little family. I had some apples so I thought a fruit version would be splendid with a bit of cinnamon and of course its sublime match cardamom. I always use silicone when baking and it makes my life so much easier when it comes to getting baked goods out as well as cleaning. If you do not have a set already I highly recommended that you buy some. I also add a small oven proof bowl filled with water in the bottom rack of the water which gives the cake so much more moisture.
- 1-1/2 cups flour
- 1 cup sugar
- 1/2 cup sunflower oil
- 1 egg
- 1 teaspoon baking soda
- 1 apple, peeled and diced
- 2 teaspoons lemon zest
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground ginger
- 1/2 cup buttermilk
Topping:
- 1/4 cup powdered sugar
- 1-2 tablespoons milk
- 1. Preheat oven to 350F. In a large mixing bowl add sugar, oil and egg, mix well. Add baking soda, lemon zest, vanilla, cinnamon, cardamom and ginger, mix well.
- 2. Add buttermilk then stir in flour until mixture is combined well. Fold in apples. Carefully pour into a greased loaf pan.
- 3. Bake for 45 minutes. In a small bowl add powdered sugar and milk until a thick consistency has formed. When cake is finished remove and place on a serving plate. Drizzle sugar on top and serve.
