APPLE CAKE

I love making loaf cakes because they are simple to put together, taste great and the perfect size for my little family. I had some apples so I thought a fruit version would be splendid with a bit of cinnamon and of course its sublime match cardamom. I always use silicone when baking and it makes my life so much easier when it comes to getting baked goods out as well as cleaning. If you do not have a set already I highly recommended that you buy some. I also add a small oven proof bowl filled with water in the bottom rack of the water which gives the cake so much more moisture.

  • 1-1/2 cups flour
  • 1 cup sugar
  • 1/2 cup sunflower oil
  • 1 egg
  • 1 teaspoon baking soda
  • 1 apple, peeled and diced
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/2 cup buttermilk
Topping:
  • 1/4 cup powdered sugar
  • 1-2 tablespoons milk
  1. 1. Preheat oven to 350F. In a large mixing bowl add sugar, oil and egg, mix well. Add baking soda, lemon zest, vanilla, cinnamon, cardamom and ginger, mix well.
  2. 2. Add buttermilk then stir in flour until mixture is combined well. Fold in apples. Carefully pour into a greased loaf pan.
  3. 3. Bake for 45 minutes. In a small bowl add powdered sugar and milk until a thick consistency has formed. When cake is finished remove and place on a serving plate. Drizzle sugar on top and serve.
