Simple Roasted Cauliflower

WANT TO SAVE THIS RECIPE?

Some people do amazing things with cauliflower.

Like cauliflower rice? Has anyone actually tried that? Is it actually good?

Or cauliflower pizza crust?

Or…ummm…this recipe I found for chocolate cauliflower cake??

Who knew you could use cauliflower in so many different ways? They might be good (I haven’t tried them), but they seem like an awful lot of work for me. And I think that often times the simplest preparation can be the tastiest.

This brings us to roasted cauliflower: Simple. Delicious. Healthy. An easy side dish that goes with just about anything. What more can I say?

Simple Roasted Cauliflower

One of my go-to side dishes for when I don't feel like planning a meal. Cauliflower is delicious roasted, but so simple to make. The coconut oil adds a hint of sweetness.

Ingredients

  • 1 head cauliflower florets
  • 1 tablespoon coconut oil melted
  • salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees F.
  • Mix cauliflower florets, melted coconut oil, salt, and pepper in a baking dish. Bake for 20-25 minutes, stirring once if necessary.
