Ingredients

  • 2 tablespoons olive oil
  • 1 onion diced
  • 1 bell pepper diced
  • 1 jalapeno finely diced
  • 1 cup white rice
  • 1 14.5 ounce can diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • 2 tablespoons chopped cilantro

Instructions

  • Preheat oven to 350°F.
  • Heat olive oil in a large skillet over medium-high heat. Add onions, bell peppers and jalapenos and cook for 5 minutes, until vegetables are softened.
