  • 1 tablespoon olive oil
  • 1/2 medium yellow onion diced
  • 13 oz smoked kielbasa or Polish sausage sliced into 1/2-inch pieces
  • 2 stalks celery chopped
  • 2 cups green cabbage shredded
  • 2 large russet potatoes scrubbed and diced (peel if desired)
  • 2 medium carrots peeled and sliced
  • 2 garlic cloves minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 2 cups fresh baby spinach
  • Salt and pepper to taste

Instructions
