Cook rice according to the package directions then empty into a mixing bowl. In a large skillet, heat 2 tsp oil and sramble the eggs into small pieces until fully cooked. Empty the scrambled eggs into the mixing bowl with the rice and stir.
Using the same skillet, heat 2 tsp oil, the green onions, peas, and carrots and let simmer on low heat for 5 minutes. Gradually add the rice and egg mixture to the skillet, stirring in one scoop at a time, until all the rice and vegetables are mixed together. Slowly add the soy sauce and stir fry sauce, and stir over low heat until the rice is golden brown. Add salt and pepper to taste and serve.
