Ingredients

Brownies

  • 1 stick butter at room temperature
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 2 eggs
  • 2 +1/2 teaspoons lemon zest
  • 2 tablespoons lemon juice freshly squeezed
  • 3/4 cup flour

Instructions

Brownies

  • Preheat oven to 350F.
  • Grease and flour an 8"x8" baking dish.
  • Zest and juice two medium lemons; set aside.
  • In a mixing bowl on medium speed, beat butter, sugar and salt until light and fluffy.
  • Beat in eggs one at a time, being sure to blend each one well.
  • Add lemon juice and lemon zest just until blended.
  • Beat in flour just until moist, don't over mix.
  • Pour into prepared baking dish and bake for 25 minutes, or until edges start to brown.
  • Cool pan on wire rack completely before glazing.

Glaze

  • Whisk together the powdered sugar, lemon juice and lemon zest until blended.
  • Spread glaze evenly over brownies.
  • Let glaze set for about 30 minutes before serving.
