Amish caramel Corn

Ingredients

  • 3 cup Plain popcorns popped or ¼ cup Popcorn Kernels, unpopped
  • 1/3 cup Roasted Peanuts plain
  • 1/3 cup Chopped Pretzels option
  • 1/3 Light Brown Sugar
  • 2 tbsp Light Corn syrup
  • ½ cup Butter unsalted
  • A pinch of Kosher Salt
  • A pinch of Baking Soda
  • 2 to 3 drops of Vanilla
  • Cooking spray

Instructions

  • If you have unpopped Popcorn kernels, then start by making the popcorns. You can use the stove method or a popcorn machine if you have one.
  • Cool the popcorn at room temperature.
  • Now take a baking tray and spray it with the cooking spray.
  • Pour in the popcorns, peanuts, and pretzels. The tray aside.
  • Pre-heat the oven at 250-degree F.
  • Take a saucepan and pour in brown sugar, light corn syrup and butter.
  • Bring the saucepan to the stove and heat it gently on low heat so that everything is melted and combined. Make sure to stir it constantly.
  • Once the mixture comes to a gentle simmer, add in the kosher salt and baking soda. The baking soda will rapidly boil but stir to avoid over boiling.
  • Once everything is mixed, the mixture will be light caramel. Remove it from the heat.
  • Pour the caramel mixture over the popcorns and mix with the help of a greased spatula.
  • Now bake the popcorns in the oven for 30 to 40 minutes. Make sure to mix them in every 5 minutes.
  • Once baked, remove the baking tray from the oven and let it cool at room temperature for 5 minutes.
  • Take the popcorns out from the tray and crumble with a little.
  • Wait to cool it completely.
  • Serve and enjoy!
