Doritos Chicken Casserole

Ingredients

  • 1 pack of nacho cheese-flavored Doritos crushed just a tad
  • 'round 2 ½ to 3 cups of shredded rotisserie chicken cut up real small
  • 1 can of black beans give 'em a good rinse and drain 'em
  • 1 can of corn get rid of the juice
  • 'bout 8 oz. of shredded colby jack cheese keep some for later
  • 1 can of mild diced tomatoes and green chiles they call it Ro-tel
  • 1 small can of green chilies gotta add some kick
  • 1 can of condensed cream of chicken soup straight from the can
  • 'bout 8 ounces of sour cream for that creamy goodness
  • 1 tablespoon of taco seasoning give it some flavor
  • Optional: cilantro for garnish if y'all fancy

Instructions

  • Get that oven nice and toasty at 350 degrees. Don't forget to give your 9x13-inch baking dish a little spritz of cooking spray.
  • Take half of them chips you crushed and spread 'em out at the bottom of your baking dish.
  • Grab a big ol' bowl and mix together the chicken, black beans, corn, a cup of that tasty cheese, Ro-tel, green chiles, cream of chicken soup, sour cream, and the taco seasoning. Give it a good stir until everything's all mixed up and happy.
  • Pour that mixture evenly over the chips in the baking pan. Spread it out nice and smooth.
  • Pop that pan in the oven and let it bake for about 20 minutes. We want everything to get all cozy and hot.
  • Now, take the rest of them chips and sprinkle 'em all over the top. And don't forget to generously sprinkle that remaining cheese too. We want it nice and melty.
  • Put that pan back in the oven for another 5 to 7 minutes, or until the cheese is all gooey and irresistible.
  • If you're feeling fancy, go ahead and garnish it with some fresh cilantro. But that part's optional, honey.
