Ingredients

Crumb Topping:

  • cup brown sugar
  • 1 tbsp granulated sugar
  • 1 tsp cinnamon
  • 4 tbsp melted butter
  • cup all-purpose flour

Muffins:

  • cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup softened butter
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • ½ cup yogurt or sour cream
  • 2 tsp vanilla extract
  • ¼ cup milk
  • cups diced apples about 2 medium

Icing (Optional):

  • 1 cup powdered sugar
  • 3 tbsp cream or milk
  • ½ tsp vanilla extract

Instructions

  • Preheat oven to 425°F. Line a muffin pan or grease well.
  • Make the crumb topping and set aside.
  • Mix dry ingredients in one bowl. In another, beat butter and sugars. Add eggs, yogurt, and vanilla.
  • Gradually mix in dry ingredients and milk until just combined. Fold in apples.
  • Fill muffin cups to the top. Add crumb topping and press gently.
  • Bake at 425°F for 5 minutes, then reduce heat to 350°F and bake for 15–18 more minutes.
  • Cool slightly, then drizzle with icing if using.
