Apple Crumble Bars

Ingredients
  

For Base & Crumble Topping:
  • 1 stick 1/2 cup unsalted butter, melted
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp. baking powder
  • Pinch of salt
  • 1 large egg
For Crumble Topping:
  • 1/3 cup old-fashioned rolled oats not quick or instant
For Apple Filling:
  • 3-4 Granny Smith apples diced (about 4 cups)
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg

Method
 

Make Base:
  1. Preheat oven to 350°F. Grease an 8-inch square baking pan.
  2. In a bowl, mix melted butter with flour, sugar, baking powder and salt until combined.
  3. Stir in egg until dough forms.
  4. Reserve 1/3 of dough for topping. Press remaining 2/3 dough into prepared pan.
  5. Bake 15 minutes until lightly golden. Cool 5 minutes.
Make Apple Filling:
  1. In a bowl, toss together diced apples, flour, sugar, cinnamon and nutmeg.
Make Crumble Topping:
  1. Mix oats into reserved 1/3 dough until incorporated.
Assemble & Bake Bars:
  1. Spread apple filling over cooled crust.
  2. Crumble oat topping over apples.
  3. Bake 30-35 minutes until topping is deep golden brown.
  4. Cool completely before cutting into bars.
