APPLE FRITTERS

So by no means are my apple fritters the size of my face.  Or “doughey.”  Or covered in more sugar than you should consume in an entire year.

Ingredients

  • 2 T Honey optional
  • 1/8 t Nutmeg
  • 1/4 c Flax Meal
  • Coconut Oil for frying
  • 1/4 c Shredded Coconut
  • 1/4 t Salt
  • 2 T Coconut Flour
  • 5 Eggs
  • 4 Green Apples
  • 1 t Cinnamon

Instructions

  • Grind the apples with a hand grater - do NOT try to do this in a food processor or you will get applesauce. We don't want applesauce. Pat grated apples dry with paper towels.
  • Combine apples with all other ingredients and mix well.
  • Heat coconut oil over medium heat in a heavy bottomed pan. Don't be afraid to be generous with the oil! We like grease around here :)
  • Add the batter to the oil with large spoonfuls. Fry for 2-3 minutes, then flip and cook for 2-3 more. Watch them closely to make sure they don't burn. Place on paper towels to drain excess oil.
  • Serve hot with honey and / or almond butter!
