These Blueberry Biscuits are sweet, bright, and super easy to whip up. Whether you're using up summer berries or digging into your freezer stash, they’re a great go-to when you want something homemade and delightful without spending all morning in the kitchen.

Ingredients
  

Biscuits:
  • 2 cups flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt
  • Zest of 1 lemon
  • 1 cup cold buttermilk
  • ½ cup melted unsalted butter
  • 1 tsp vanilla
  • 1 cup blueberries
  • Turbinado sugar for topping
Glaze:
  • 1 cup powdered sugar
  • 2 –3 tbsp lemon juice
  • ½ tsp lemon zest

Method
 

  1. Preheat oven to 475°F. Line baking sheet with parchment.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, salt, and lemon zest.
  3. In a separate bowl, stir buttermilk and melted butter together, then add vanilla.
  4. Pour wet ingredients into dry and stir until just combined. Gently fold in blueberries.
  5. Drop scoops of dough onto baking sheet. Sprinkle with turbinado sugar.
  6. Bake for 10–14 minutes, or until golden.
  7. Cool slightly, then drizzle with lemon glaze. Enjoy!

Notes

  • No buttermilk? Use the milk + vinegar trick.
  • Add-ins: A handful of chopped nuts or white chocolate chips would be amazing.
  • No turbinado sugar? Use regular sugar for a little sweetness on top.
