Ingredients
  

  • 1 pound of large shrimp peeled and deveined
  • 1 tablespoon of Cajun seasoning
  • 2 tablespoons of olive oil
  • 1/2 pound of sausage sliced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow onion sliced
  • 2 cloves of garlic minced
  • 1 cup of chicken broth
  • 1/2 cup of heavy cream
  • 1/4 cup of Parmesan cheese grated
  • 8 ounces of pasta such as penne or fettuccine
  • Chopped fresh parsley for garnish

Method
 

  1. To begin, cook the pasta according to the package instructions. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sausage and cook until it is browned on both sides. Remove the sausage from the skillet and set it aside.
  2. Next, add the shrimp to the skillet and season with the Cajun seasoning. Cook the shrimp until they are pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set them aside with the sausage.
  3. In the same skillet, add the bell peppers, onion, and garlic. Cook until the vegetables are tender, about 5 minutes. Add the chicken broth and heavy cream to the skillet and stir to combine. Bring the mixture to a simmer and cook until it has thickened slightly, about 5 minutes.
  4. Add the cooked pasta and sausage to the skillet and stir to combine. Sprinkle the Parmesan cheese over the top of the pasta and stir until it is melted and well combined. Serve the pasta hot, garnished with chopped fresh parsley.
