Creamy Chicken Pot Pie Pasta

Ingredients

  • 12 ounces egg noodles
  • 2 tablespoons butter
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • cups frozen mixed vegetables thawed
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken breast shredded
  • Salt and pepper to taste

OPTIONAL GARNISH

  • 2 tablespoons fresh parsley chopped

Instructions

  • COOK THE PASTA First things first – cook those egg noodles according to what your package says until they’re perfectly al dente. Once they’re done, drain them and set aside. We’ll come back to these in a bit!
  • PREP THE VEGGIES AND SAUCE In a large skillet (I love using my heavy-bottomed one for this!), melt your butter over medium heat. Add in the diced onion, minced garlic, and those colorful mixed veggies. Season everything with thyme, salt (about ½ teaspoon), and pepper (¼ teaspoon). Let it all cook together until those onions are nice and soft – usually takes about 5 minutes.
  • MAKE THE AMAZING CREAMY SAUCE Here’s where the magic happens! Sprinkle the flour over your veggie mixture and stir until everything’s coated. Then, pour in your chicken broth and heavy cream. Keep stirring and let it simmer until it gets thick and dreamy – about 5 minutes. This sauce is seriously what makes the whole dish!
  • BRING IT ALL TOGETHER Time to add your cooked noodles and that shredded chicken back to the pan. Stir everything together until it’s all coated in that amazing sauce. Give it a taste and add more salt and pepper if needed – you want every bite to be perfect!
  • THE FINISHING TOUCH If you’re feeling fancy (and I totally recommend this!), sprinkle some fresh parsley on top. It adds such a pretty pop of color and fresh flavor!
  • STORAGE TIPS To Store: Keep your leftovers in an airtight container in the fridge for up to 5 days. To Reheat: Pop it in the microwave or warm it up on the stove. Just remember my pro tip – add a splash of cream or broth to bring back that silky sauce!

Notes

  • Want it lighter? Use half & half instead of heavy cream
  • Try chicken thighs instead of breast meat for extra flavor
  • Add extra veggies – broccoli and peas are amazing in this!
  • Spice it up with red pepper flakes or cayenne
  • Use rotisserie chicken to make it even easier!
