Crispy Bacon and Potato Bake

Ingredients
  

  • 4 medium russet potatoes scrubbed and thinly sliced (about 1/8-inch thick)
  • 6 slices bacon chopped into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh chives or parsley for garnish

Method
 

  1. Preheat the oven to 400°F. Line a large rimmed baking sheet with parchment paper or foil.
  2. Place the sliced potatoes in a large bowl. Drizzle with olive oil and season with salt and pepper. Toss until the potatoes are evenly coated.
  3. Arrange the potatoes in a single layer on the prepared baking sheet. Scatter the chopped bacon evenly over the top.
  4. Bake for 30-35 minutes, tossing halfway, until the potatoes are golden brown and crispy and the bacon is cooked through.
  5. Remove pan from the oven. Let cool for 5 minutes before garnishing with chopped chives or parsley. Serve warm.

Notes

For extra flavor, try using melted butter instead of olive oil. You can also add sliced onions or bell peppers. For more richness, sprinkle shredded cheese over the top during the last 5 minutes of baking.
