Easy Chicken Sheet Pan Quesadilla

Ingredients

  • 6 slices bacon diced
  • 4 scallions sliced
  • 1 red bell pepper diced
  • 1 jalapeño diced
  • 6 cloves garlic minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 lb shredded chicken
  • 2 15 oz cans beans, rinsed and drained
  • 1 cup sour cream
  • 1/4 cup cilantro chopped
  • 16-24 small tortillas
  • 3-4 cups shredded cheese
  • Melted butter for brushing

Instructions

  • Cook bacon until crispy in a skillet; reserve 1 Tbsp bacon grease. Sauté pepper, jalapeño, garlic and spices in the grease.
  • In a bowl, combine sautéed veggies, bacon, chicken, beans, sour cream and cilantro.
  • Brush a sheet pan with melted butter. Layer tortillas to cover the bottom, overlapping as needed.
  • Top with chicken filling, then cheese. Layer more tortillas over top.
  • Brush top tortillas with melted butter.
  • Bake at 425°F for 20 minutes. Remove top pan and bake 5 minutes more until crispy.
  • Cut into squares and serve with desired toppings like salsa, guac, etc.

Notes

  • Use a rotisserie chicken for quick prep or cook chicken breasts.
  • Easily make it vegetarian by using beans, veggies and vegan cheese!
