Easy Cinnamon Bread

Ingredients
  

  • 2 cups flour
  • 1 cup sugar
  • 2 t. baking powder
  • ½ t. baking soda
  • t. ground cinnamon divided
  • 1 t. salt
  • 1 cup buttermilk
  • ¼ cup vegetable oil
  • 2 eggs
  • 2 t. vanilla extract
  • 2 T. butter melted
  • 2 T. brown sugar

Method
 

  1. Preheat oven to 350 degrees and grease a 9 x 5 loaf pan. Set aside.
  2. In your mixer, combine the flour, sugar, baking powder, baking soda, 1½ t. cinnamon, and salt.
  3. In a medium bowl, combine the buttermilk, vegetable oil, eggs, and vanilla.
  4. Slowly add wet ingredients to dry ingredients, and blend well.
  5. Pour into greased loaf pan and smooth the top with a spatula.
  6. In a small bowl, combine the melted butter, brown sugar, and remaining 1 t. cinnamon.
  7. Pour over the mixture in the loaf pan. Using a knife, swirl the cinnamon-butter throughout the loaf.
  8. Bake for 50-55 minutes, or until a toothpick comes out clean.
  9. Cool 5 minutes, then transfer to cooling rack.
