Ingredients

  • 4 Sliced Onions peeled
  • 4 tbsp of Unsalted Butter
  • 4 Garlic Cloves finely chopped
  • 1/2 tsp of Black Pepper
  • 1 tsp of Fresh Thyme
  • 2/3 cup of Beef Broth low sodium
  • 2 tbsp of Aged Balsamic Vinegar
  • 4 Boneless Skinless Chicken Breasts
  • 1/2 tsp of Sea Salt
  • 1 cup of Shredded Mozzarella
  • 1/2 cup of Grated Parmesan

Instructions

  • Preheat and Prepare: Crank up your oven to 400°F and mist a baking dish with a cooking spray.
  • Sauté the Onions: In a large skillet, melt butter over medium to high heat. Add your sliced onions, sautéing for approximately 5 minutes; stir them now and then.
  • Infuse Flavors: Lower the skillet heat to medium and toss in garlic, pepper, and thyme. Stir and cook for an additional minute.
  • Turn Onions into Jam: Pour in the beef broth along with the balsamic vinegar. Continue cooking until the onions adopt a jammy texture, around 10 minutes.
  • Assemble the Dish: Lay a third of your caramelized onions into the prepped baking dish. Situate the chicken breasts on top and season with a sprinkling of salt.
  • Cheese It Up: Pile on the remaining caramelized onions over the chicken and smother with mozzarella and Parmesan cheese.
  • Bake to Perfection: Slide the dish into the oven and bake for 30 minutes or until the chicken reaches an internal temperature of 165°F.

Notes

For uniformly cooked chicken, ensure all breasts are roughly the same size. If they're too thick, halve them diagonally.
