Mix together all ingredients for the cheese filling in a bowl.
Sauté onions in olive oil, then add beef and sausage. Cook until browned. Add garlic, then broth to deglaze. Stir in marinara and seasonings. Simmer.
Boil noodles, drain, and lay flat on parchment.
Spread cheese and meat sauce on each noodle, then roll tightly.
Place in a greased 9x13” pan with sauce on the bottom.
Top with remaining sauce and mozzarella. Cover and bake at 375°F for 35 minutes.
Optional: broil uncovered for 2–3 minutes to brown the top.
Let cool slightly, then serve hot.
