Ingredients
  

For the Cookie Dough:
  • 2 cups all-purpose flour
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cubed
  • 1/2 cup dark brown sugar packed
  • 1/3 cup granulated sugar
  • 1 large egg room temp
  • 1 egg yolk room temp
  • 1 tsp vanilla extract
For the Pecan Filling:
  • 6 tbsp unsalted butter
  • 1/3 cup dark brown sugar
  • 1/3 cup pure maple syrup
  • 2 cups pecans chopped
  • 1/3 cup heavy cream
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/8 tsp salt
  • Flaky sea salt for garnish

Method
 

  1. Mix the dry ingredients: In a bowl, whisk flour, cornstarch, baking soda, baking powder, and salt.
  2. Make the dough: Cream butter and sugars. Beat in egg, yolk, and vanilla. Slowly add dry ingredients.
  3. Shape cookies: Scoop into balls, indent centers with a spoon, and chill for 30 minutes.
  4. Prepare the filling: Melt butter, brown sugar, and maple syrup in a saucepan. Add pecans. Stir in cream and spices. Cool slightly.
  5. Fill and bake: Spoon filling into each chilled dough ball. Bake at 350°F for 10–12 minutes.
  6. Cool and finish: Let cool on tray, then move to a rack. Sprinkle with sea salt and enjoy.
