Slow Cooker Beer Bratwurst with Onions & Peppers

Ingredients
  

For the Base:
  • 6 fresh bratwurst sausages
  • 2 large sweet onions sliced into half-moons
  • 3 bell peppers mixed colors, sliced
  • 3 cloves garlic minced
  • 1 12 oz bottle beer (German lager preferred)
  • 1 tablespoon brown sugar
Seasoning Mix:
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon caraway seeds optional
  • 1/4 teaspoon crushed red pepper optional
For Serving:
  • Hoagie rolls or pretzel buns toasted
  • Whole grain mustard
  • Sauerkraut
  • Additional caramelized onions
  • Fresh parsley for garnish

Method
 

  1. Layer sliced onions and peppers in bottom of 6-quart slow cooker.
  2. Mix all seasoning ingredients in small bowl.
  3. Arrange bratwurst over vegetables.
  4. Sprinkle seasoning mix and brown sugar evenly over brats.
  5. Add minced garlic.
  6. Pour beer around edges (not directly over brats).
  7. Cover and cook on LOW 6-8 hours or HIGH 3-4 hours.
  8. Brats should reach internal temperature of 165°F.
  9. Let rest 5 minutes before serving.
  10. Serve on rolls with vegetables and preferred toppings.
