Ingredients

  • 6 cups of sliced Kirby cucumbers
  • 1 cup of sliced red peppers cut into 1-inch strips
  • 2 jalapenos seeded and minced
  • 1 TBS of sea salt
  • 1 1/4 cup of white vinegar
  • 2/3 cup of sugar
  • 1 1/2 tsp of dried dill
  • 1/2 tsp of celery seed
  • 1/4 tsp of cayenne pepper
  • 2/3 cup of water

Instructions

  • Grab a medium-sized bowl and toss in your cucumbers, red peppers, and jalapenos. Sprinkle that sea salt over the top and give everything a good mix. Let the mixture hang out and get cozy for about an hour.
  • Meanwhile, in a small saucepan, combine the vinegar, sugar, dill, celery seed, cayenne pepper, and water. Bring it to a gentle boil, stirring until the sugar is all dissolved. Then, take it off the heat.
  • Time to layer those lovely veggies into your favorite glass or plastic containers. Pour that tangy vinegar mixture right over the top.
  • Pop the containers into the fridge and give the pickles a little chill time - at least 24 hours - before digging in.
