Ingredients
  

  • 6 cups of sliced Kirby cucumbers
  • 1 cup of sliced red peppers cut into 1-inch strips
  • 2 jalapenos seeded and minced
  • 1 TBS of sea salt
  • 1 1/4 cup of white vinegar
  • 2/3 cup of sugar
  • 1 1/2 tsp of dried dill
  • 1/2 tsp of celery seed
  • 1/4 tsp of cayenne pepper
  • 2/3 cup of water

Method
 

  1. Grab a medium-sized bowl and toss in your cucumbers, red peppers, and jalapenos. Sprinkle that sea salt over the top and give everything a good mix. Let the mixture hang out and get cozy for about an hour.
  2. Meanwhile, in a small saucepan, combine the vinegar, sugar, dill, celery seed, cayenne pepper, and water. Bring it to a gentle boil, stirring until the sugar is all dissolved. Then, take it off the heat.
  3. Time to layer those lovely veggies into your favorite glass or plastic containers. Pour that tangy vinegar mixture right over the top.
  4. Pop the containers into the fridge and give the pickles a little chill time - at least 24 hours - before digging in.
