Walking Taco Casserole

Y'all, I'm so excited to share one of my all-time favorite crowd-pleasing dinner recipes with you today - my Walking Taco Casserole!

Ingredients
  

  • 2 lbs ground beef
  • 1 large sweet onion diced
  • 2 packets taco seasoning
  • 1 cup water
  • 2 cups tomatillo salsa
  • 1 cup sour cream
  • 2 15 oz cans black beans, rinsed and drained
  • 2 15 oz cans corn, drained
  • 4 cups Frito corn chips divided
  • 3 cups shredded Mexican-blend cheese
  • Optional Toppings:
  • Chopped cilantro sliced avocado, shredded lettuce, diced tomatoes, sliced jalapeños

Method
 

  1. Preheat oven to 375°F. Grease a 9x13 baking dish.
  2. Brown the ground beef in a skillet over medium-high heat until cooked through, 5-7 minutes, making sure to crumble the beef as it cooks. Add the diced onions and cook for 2-3 more minutes until translucent.
  3. Stir in the taco seasoning and water. Allow to simmer for 2-3 minutes until slightly thickened.
  4. Remove from heat and stir in the tomatillo salsa, sour cream, black beans and corn until well combined.
  5. Crush half of the corn chips and spread them into an even layer in the prepared baking dish. Pour the beef and bean mixture evenly over top.
  6. Sprinkle the shredded cheese in an even layer over top. Top with the remaining uncrushed corn chips.
  7. Cover with foil and bake for 15 minutes. Remove foil and bake for 5 more minutes until lightly browned on top.
  8. Allow to cool slightly before serving with desired toppings like chopped cilantro, avocado, lettuce, tomatoes, jalapeños and extra salsa!
