Buffalo “Chicken” Taquitos

Super Bowl is right around the corner! Can you believe it? Who are you cheering for this year? The tarnished Patriots or the Seahawks? Better check the game balls before they start! What do you think of that entire situation? I can’t believe they did it because it just boggles my mind. I mean did they really think they would get away with it? Then I speculate that both teams played with the deflated ball so wouldn’t that mean they both had the same advantage? Except maybe the Patriots practiced with deflated balls so they were ahead of the learning curve. Then my last question is can you really tell the difference? I saw a ex-pro football player saying on TV that he couldn’t even tell the difference! Oh the drama of professional sports!

Speaking of the Super Bowl do you have that menu planned yet? I mean seriously peeps that’s the most important part of the entire game obviously. Who’s with me on that? The ads do come in a close second. They are always more entertaining than the game in my opinion! I’m also pretty excited about the performances this year too. I’ll take some Katy Perry and Idina Menzel any day! Although I did see some reporters making fun of it and wondering if they were targeting the teenage girls this year. Apparently I’m a teenage girl at heart!

See those yummy Buffalo Chicken Taquitos? Those should absolutely be on that Super Bowl menu of yours without a doubt.  They are baked and not fried which means they are a healthier version of your fried taquitos. Plus they are stuffed full of the meat free option Gardein™. I used their Seven Grain Crispy Tenders in these taquitos. Gardein is made from a blend of non-GMO soy and wheat, ancient grains and veggies plus it has less calories and fat than meat with no cholesterol! The crispy tenders were mixed with buffalo sauce, cheese and green onions to create the delicious filling. Baked them up and dust them with sea salt then dip them in Blue Cheese dressing and you have the perfect game day food! Plus if you have any vegetarians attending your big party they will be smiling from ear to ear!

Want to know just how delicious these taquitos are? They are so delicious that my hubs, meat loving man of mine, didn’t even realize that they were meat free! I had to try the recipe and not mention anything about them being meat free to get his honest opinion. I was a little nervous about it, but he inhaled them left and right while I sat on the other side of the table giggling. He raised his eyebrows and asked what exactly was so funny and then I told him they were meat free. His jaw dropped and he’s all about me making more of these delicious taquitos for the Super Bowl!

Buffalo “Chicken” Taquitos

Ingredients

  • 1 (9 oz) package Gardein Seven Grain Crispy Tenders
  • 1 c. shredded cheddar cheese
  • 8 fajita sized flour tortillas
  • 1/2 c. buffalo sauce
  • 1/4 c. chopped green onions
  • 2 tsp sea salt
  • Pam Spray
  • 1/4 Blue Cheese dressing

Instructions

  • Prepare cripsy tenders according to package. Chop them crispy tenders.
  • Combine crispy tenders, cheese, buffalo sauce and onions in mixing bowl. Evenly distribute between flour tortillas spreading mixture down the middle. Roll tortilla up and place seam side down in 8×8 in glass baking dish. Spray tortillas with Pam spray. Sprinkle with sea salt.
  • Bake at 450 degrees for 20-25 minutes or until tortillas are starting to turn golden brown.
  • Drizzle or serve with Blue Cheese dressing.
