Okay. Maybe there are only nine, but who cares. It’s porridge we’re talking about—sweet, creamy, fluffy porridge which feels like a hug in a bowl. Oatmeal might be too simple of a meal for some, but I LOVE it.
I enjoy few things more and curling up under a pile of soft blankets with a good book, a mug of hot green tea, and a bowl of warm porridge. That’s what I’d call a blissful morning, don’t you?
Of course, it’s exam season right now, so change that bed & blankets set-up for a messy kitchen filled with dishes I should have done years ago (Okay. Maybe days. Still nasty. Real nasty) and me running short on time for my morning lectures, gobbling oatmeal like I’m some hoover. No time for tea, no slow playlist, no time for books, no life. Just a whole lot of stress and tears. Can you, my fellow college students, feel me?
So, excuse me for keeping things short and sweet today. I just took a massive exam, and I’m feeling a tiny bit under the weather right now, so unless you want to hear me whine for like the 38728937489th time this week like the big crybaby I am, I shall stop now and move on this beautiful creation that is coconut lime porridge.
As you may know, if you read often or follow me on Instagram: I’m like the biggest oatmeal fan there is. Oats, all day, err day! They’re cheap, quick to prepare, make great leftovers, and more importantly: delicious!
I love good ol’ plain porridge best, topped with a bit of coconut sugar or agave, but I must admit that playing around with the endless flavor possibilities is fun too. This coconut lime combo is something I’ve been obsessing over lately. It tastes just so tropical and lush – like a vacation in a bowl, honestly! (even if it’s your desk, the tropical destination you’re enjoying your bowl at cries*).
Whether you’re a true oatmeal lover, always on the hunt for new flavor combinations to try, or simply unknown to the wonders of porridge bliss, you need to give this one a go. You do.
- 300 grams coconut milk
- 50 grams rolled oats
- 15 grams shredded coconut
- 2 tbsp. agave syrup
- 1 tsp. vanilla extract
- zest from half a lime
- a pinch of salt
- Mix milk, coconut, agave syrup, salt, vanilla, and lime zest.
- Heat milk mixture in a saucepan until it simmers.
- Add in the oats.
- Keep heating until the mixture simmers. Make sure you stir this mixture often, so it doesn’t stick to the bottom of the pan.
- When it simmers, keep heating for 2-3 minutes until the porridge is creamy and smooth.
- Enjoy with your favorite toppings! Some berries and extra agave syrup go super well with it!
