Corn Casserole
Ingredients
- 15 ounces whole kernel corn
- 1 cup sour cream
- 14.75 ounces creamed corn
- 8 ounces Jiffy Corn Muffin mix
- ½ cup butter melted
Instructions
- Mix all ingredients in a mixing bowl. Make sure the whole kernel corn is well-drained.
- Grease an eight-by-eight-inch baking pan.
- Pour the ingredients into the prepared pan and bake at 350°F (preheated oven) for approximately 45 or until the top is nicely browned.
Serve it to your friends and family hot from the oven and they will love it.
Notes:
If you want you can mix 2 eggs in the mixture for making a lighter corn casserole. You can also increase the quantity of the cheese as it will ensure a better taste. Kids love cheese so give them a little extra. Let’s say you want the same recipe to use for the sweet corn casserole then add a half cup sugar without the jiffy mix. Even adding eggs can turn it into a corn dessert that you will love. The serving is for 8 people perfect for a family dinner. You can roast chicken, fried chicken tenders, hamburgers, crockpot chicken, and steaks on the menu with your casserole. It will be the perfect match and everyone will love it.
What if you cannot find the Jiffy corn mix?
If you cannot find the jiffy mix in your store then you can use any other corn mix as a substitute. But you can easily find it online so order it more and keep it in your storage.
Can you make corn casserole before time?
Of course, you can. It can be made 48 hours before the actual time when you want to it. You can bake it till the before cheese part. Let the casserole cool down and put the plastic wrap on the sheet. Now, after two days take out the dish from the freezer or the fridge, add the cheese and bake it at 350 degrees for 15 minutes. Your casserole will taste the same and everyone will think you brought it fresh from the oven. But we do not recommend freezing it because casserole is easy to make and won’t take much time.

I would like to know what kind of cheese and when cheese should be added in? I am guessing maybe the last 15 minutes of the 45 min bake time? And I guess it would be on the top??
