It has always been my go-to recipe whenever I want to add Zucchini to my meal. I mix it with some spices, parmesan, and onions and serve it as an appetizer for dinner. No matter what you say that it is an appetizer for lunch and dinner, I will never say no to it for the breakfast.

I have tried it in so many ways like bake, grilling, frying, and every time it is just perfect. You can serve it with pasta, meatloaf, and any of your meat recipes.
Make small shapes of Zucchini patties so they can be the perfect appetizer. If I am going to make them as a dinner meal, then I make them in a bigger shape. Moreover, I add some Zucchini dipping sauce, fries, coleslaw, and bread.

You should go with a side of mayo, ranch, or alfredo for enjoying this perfect appetizer. I have tried it with sour cream as well and it will work perfectly with the recipe.
How to make the perfect Zucchini patties?
Firstly, make sure that whatever recipe you are trying, your hands are always clean. Grate the Zucchini and make sure to squeeze it to remove the excessive water.
How to store them?
You can keep your leftovers in an airtight container for 4-5 days. If you want to freeze them, make sure to add parchment paper or aluminum foil to the container and then add it. There should be no moisture so ensure to tightly squeeze the water of the Zucchini. You can even use paper towels for drying them. They are perfect to store for 2 months so you can enjoy them whenever you want.
- Zucchini grated 2 cups
- Flour half cup
- Parmesan cheese half cup
- Eggs 2 beaten
- Salt and pepper to taste
- Mozzarella cheese grated half cup
- Onion chopped half cup
- Vegetable or sunflower oil 2 tbsp
- Take a bowl and all the ingredients in the water squeezed, dry, and grated Zucchini.
- Mix it well (Here you can add any other spice as well to make your Zucchini spicy or with extra flavors)
- Heat oil in the skillet over medium heat. Make the Zucchini Pattie shape and cook it on low flame until both sides and golden.
- Serve it with your favorite sauce and enjoy this delicious recipe with your friends and family.
Why do Zucchini patties fall apart?
Zucchini has excessive water inside of it and it is always recommended to make sure that it should be dried before use. It will never bind if it has excessive water. In case, there is water you can make the shape, dip it in egg, and then with parmesan cheese or panko breadcrumbs to it stays together. Hope it helps!

Mine didn’t turn out as pretty as yours. Looked more like Latkes. I did add a large clove of garlic and fresh Basil and Italian Parsley from my garden. Easy to make and delicious.
