I rummage through my pantry and refrigerator and find a head of green cabbage, some spicy pork sausage, and a few other staple ingredients. That’s when it hit me – why not make Cajun Cabbage Jambalaya? I’ve always loved Jambalaya, but I never thought to add cabbage to it.

I quickly gather all of my ingredients, and get started on the cooking process. The first step is to brown the spicy pork sausage with onion and garlic in a large pot. The aroma of the sausage and garlic cooking together is enough to make your mouth water! After a few minutes, I add in the green bell pepper and celery, cooking and stirring for an additional three minutes.

Next, I add all of the remaining ingredients, including diced tomatoes, chicken broth, water, brown basmati rice, chili powder, salt, paprika, cumin, cayenne pepper, and freshly ground black pepper. I bring everything to a boil, cover the pot, reduce the heat to low, and let it cook until the rice is tender, stirring occasionally.

While the Jambalaya is cooking, I can’t help but feel excited about how it’s going to turn out. The combination of the spicy pork sausage and the tender green cabbage is going to be amazing, I just know it! And the best part is, this dish is so easy to make. Ingredients

  • 16 ounces of spicy pork sausage
  • 1 onion roughly chopped
  • 4 minced garlic cloves
  • 1 green bell pepper chopped
  • 1 cup thinly sliced celery
  • 1 head of green cabbage chopped
  • A 14-ounce can of diced tomatoes
  • 1 cup of chicken broth
  • 1/2 cup of water
  • 1 cup of brown basmati rice
  • 1 tablespoon of chili powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of paprika
  • 1/2 teaspoon of ground cumin
  • A pinch of cayenne pepper
  • A pinch of freshly ground black pepper

Instructions

  • Assemble all necessary ingredients.
  • In a large pot, brown the sausage with the onion and garlic.
  • Add the green bell pepper and celery, cooking and stirring for an additional 3 minutes.
  • Combine the rest of the ingredients and bring the mixture to a boil.
  • Cover the pot, reduce heat to low, and let it cook until the rice is tender, stirring occasionally. This should take approximately 40 to 50 minutes.
