Ingredients

  • 1/4 cup chopped fresh basil
  • 2 teaspoons olive oil
  • 1/2 cup grated provolone cheese
  • Salt and freshly ground black pepper to taste
  • 1/2 cup prepared tomato sauce
  • 2 large eggs
  • 1/2 cup olive oil for frying you can add more if you need to
  • 3/4 cup grated Parmesan cheese we’ll use it in parts, so don’t mix it all together
  • 4 boneless skinless chicken breast halves
  • 2 tablespoons all-purpose flour keep some extra handy if needed
  • 1/4 cup fresh mozzarella cut into cute little cubes
  • 1 cup panko bread crumbs you might need more, just in case

Instructions

  • First things first, preheat your oven to 450°F (230°C).
  • Now, let’s work on those chicken breasts. Place them between two sheets of heavy-duty plastic (like resealable freezer bags) on a flat surface. Use the smooth side of a meat mallet to pound the chicken to a 1/2-inch thickness.
  • Season your chicken generously with salt and pepper. Then, with a sifter or strainer, sprinkle flour on both sides of each chicken breast.
