Ingredients

  • 1 can 15 oz black beans, drained and rinsed real good
  • 1 can pinto beans or 2 cans if you’re a bean lover like me, drained and rinsed
  • 1 can 15 oz sweet corn, drained
  • 6-8 plump Roma tomatoes diced up nice and small
  • 1/2 of a large sweet onion diced
  • 2 ripe avocados peeled, seeded, and diced
  • 1 bunch of fresh cilantro finely chopped (the more, the merrier!)
  • Juice from 3 zesty limes
  • A pinch of sea salt to taste (add as much as you like, darlin’)

Instructions

  • Grab yourself a big ol’ bowl and toss in the beans, corn, tomatoes, and onion. Give it a good mix, honey.
  • Gently fold in those avocados and cilantro, being careful not to squish ’em too much.
  • Now, squeeze that fresh lime juice right over the top, and sprinkle in a pinch of sea salt.
