Ingredients
  

  • 1 can 15 oz black beans, drained and rinsed real good
  • 1 can pinto beans or 2 cans if you're a bean lover like me, drained and rinsed
  • 1 can 15 oz sweet corn, drained
  • 6-8 plump Roma tomatoes diced up nice and small
  • 1/2 of a large sweet onion diced
  • 2 ripe avocados peeled, seeded, and diced
  • 1 bunch of fresh cilantro finely chopped (the more, the merrier!)
  • Juice from 3 zesty limes
  • A pinch of sea salt to taste (add as much as you like, darlin')

Method
 

  1. Grab yourself a big ol' bowl and toss in the beans, corn, tomatoes, and onion. Give it a good mix, honey.
  2. Gently fold in those avocados and cilantro, being careful not to squish 'em too much.
  3. Now, squeeze that fresh lime juice right over the top, and sprinkle in a pinch of sea salt.
  4. Stir everything together, and taste your masterpiece! Feel free to add more sea salt if you think it needs a lil' extra kick. Enjoy, y'all!
