Pork Chop Casserole

Ingredients:

  • 6 boneless pork chops (4-6 oz each), about 1-inch thick
  • 1 tsp salt
  • 1 tbsp oil
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 (2.8 oz) can French fried onions, divided
  • 1/2 lb thinly sliced potatoes

Instructions:

  1. Preheat oven to 400°F. Season the pork chops all over with salt.
  2. Heat the oil in a skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side until browned.
  3. In a bowl, mix together the cream of mushroom soup, milk, cheese, sour cream, and half the fried onions.
  4. Layer the potato slices in an even layer in a 9×13 baking dish. Top with the seared pork chops.
  5. Pour the soup mixture over the top of the pork chops. Cover with foil.
  6. Bake for 30 minutes, then remove foil. Top with remaining fried onions.
  7. Bake uncovered for 10-15 more minutes until hot and bubbly.
