HONEY BBQ MEATLOAF
Ingredients
Meatloaf Mix:
- 2 pounds ground beef 85/15
- 1 pound ground pork
- 1 large yellow onion finely diced
- 4 garlic cloves minced
- 3 large eggs beaten
- 2/3 cup whole milk
- 3/4 cup seasoned breadcrumbs
- 2/3 cup freshly grated Parmesan
- 1/4 cup fresh parsley chopped
- 2 tablespoons Worcestershire sauce
- 2 teaspoons sea salt
- 1 teaspoon black pepper
- 1/2 teaspoon dried thyme
Sweet BBQ Glaze:
- 1 cup favorite BBQ sauce
- 1/3 cup honey
- 1/4 cup grape jelly
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
Instructions
- Preheat oven to 350°F. Line a 9×5 inch loaf pan with parchment, letting edges hang over.
- In a small skillet, sauté onion and garlic until softened, about 5 minutes. Let cool completely.
- In a large bowl, combine eggs, milk, breadcrumbs, cheese, and seasonings. Let sit 5 minutes.
- Add meats and cooled onion mixture to bowl. Mix gently with hands until just combined – don’t overmix.
- Transfer to prepared pan, pressing gently to remove air pockets.
- Whisk together all glaze ingredients in a bowl.
- Spread 1/3 of glaze over meatloaf.
- Bake 45 minutes, then add another 1/3 of glaze.
- Continue baking 25-30 minutes until internal temperature reaches 160°F.
- Let rest 10 minutes before slicing. Serve with remaining glaze.
