- Ground beef – about 450g (1 pound). Choose beef with a bit of fat for juiciness.

Making The Rollups

Cook the beef
In a large frying pan over medium heat, brown your ground beef, breaking it up as it cooks until there’s no pink left. Add your garlic powder, onion powder, salt, and pepper. Give it a good stir to combine, then drain off any excess grease – this keeps your rollups crispy rather than soggy.
Prepare the dough
Roll out your pizza dough on a lightly floured surface into a rectangle. Sprinkle the shredded cheddar cheese evenly over the dough, leaving about a 1cm border around the edges.
Add the filling
Spoon your seasoned beef mixture over the cheddar layer, spreading it out evenly. Sprinkle the mozzarella cheese over the top – don’t be shy with it!
Roll it up
Starting from one of the short edges, roll the dough up tightly like a Swiss roll. Pinch the seam firmly to seal in all that lovely filling. If any bits of cheese escape, just tuck them back in.
Brush with garlic butter
Melt your butter in a small bowl and stir in the minced garlic. Brush this generously all over the rolled dough – this is what creates that gorgeous golden, garlicky crust.
Bake
Place your roll seam-side down on a baking sheet lined with parchment paper. Bake at 190°C (375°F) for 18-20 minutes until it’s golden brown and the cheese is bubbling out slightly at the ends.
Slice and serve
Let it rest for about 5 minutes (this helps it set so you get clean slices), then use a sharp knife to cut it into rounds. Serve whilst warm with ketchup, burger sauce, ranch dressing, or whatever dipping sauce you fancy!

Questions You Might Have
Can I use a different type of dough?
Puff pastry works brilliantly! Crescent roll dough is another option, though it’s a bit more delicate to work with.
My filling is leaking out – what did I do wrong?
Make sure you’re leaving that border around the edges and pinching the seam really well. Also, draining the beef thoroughly prevents excess liquid.
Can I add other burger toppings?
Absolutely! Diced pickles, crispy bacon pieces, or even finely diced onions would all be lovely mixed into the filling.
What if I don’t have fresh garlic?
You can use ½ teaspoon of garlic powder mixed into the melted butter instead.
Can these be made ahead?
You can prepare the roll, brush it with garlic butter, and refrigerate for up to 24 hours before baking. Or bake them completely and reheat when needed.
How do I reheat leftovers?
Pop them in a moderate oven (180°C) for about 10 minutes until warmed through. The microwave works but won’t keep them as crispy.
Can I freeze these?
Yes! Freeze the baked and cooled rollups for up to 2 months. Reheat from frozen in the oven until heated through.
