The name says it all – this casserole has just about everything in it! Ground beef, potatoes, carrots, celery, rice, cheese, and more all cooked together in the slow cooker. It sounds like a lot but trust me, it works. And the best part? You probably have every single ingredient sitting in your kitchen right now. No special shopping trip needed. I make this on those crazy busy days when I know I won’t have time to mess around with dinner later. Just toss it all in the crockpot in the morning and forget about it. When you get home, dinner’s ready and your house smells amazing!

Why is it called Kitchen Sink Casserole?

You know that saying “everything but the kitchen sink”? That’s where the name comes from. This casserole has so many different things in it, but somehow they all taste great together.

Can I use brown rice instead of white rice?

I wouldn’t recommend it. Brown rice takes way longer to cook and needs more liquid. Stick with white rice for this one.

What kind of ground beef should I use?

Use lean ground beef – like 90/10 or at least 85/15. You don’t want a ton of grease in your slow cooker because you can’t really drain it once everything’s in there.

Can I prep this the night before?

You can chop your veggies ahead of time and keep them in the fridge, but I wouldn’t brown the meat until you’re ready to actually cook the casserole.

Do I have to use A1 sauce?

It adds good flavor but if you don’t have it, you can use Worcestershire sauce instead or just skip it.

Can I add other vegetables?

Sure! Green beans, corn, or peas would all work. Just keep the total amount of veggies about the same.

How do I store leftovers?

Put leftovers in a covered container in the fridge for up to 3 days. Reheat in the microwave.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • white onion – just one medium-sized onion, sliced up.
  • potatoes – I use russet potatoes and slice them thin. You want 4 medium potatoes.
  • carrots – slice these thin too so they cook through.
  • celery – adds flavor and texture.
  • garlic – fresh minced garlic works best.
  • olive oil – just a little bit to coat the veggies.
  • lean ground beef – this is important! Use lean meat so you don’t end up with a greasy mess. I usually go with 90/10.
  • seasoning salt and onion powder – basic seasonings that add a lot of flavor.
  • A1 sauce – gives the beef a nice savory kick. You can use Worcestershire sauce if you don’t have A1.
  • butter – you’ll cut this into small pieces to dot over the top.
  • white rice – uncooked! It cooks right in the slow cooker.
  • condensed tomato soup – one 10-ounce can.
  • water – this mixes with the soup to make the liquid for cooking.
  • shredded cheddar cheese – for topping at the end.

HOW TO MAKE CROCKPOT KITCHEN SINK CASSEROLE:

Grab a big bowl and throw in your sliced onions, potatoes, carrots, and celery. Drizzle on the olive oil and toss in your minced garlic. Mix it all around until everything’s coated.

Spray your slow cooker with cooking spray, then dump in all those veggies. Spread them out in an even layer.

Now get a skillet going on the stove over medium-high heat. Brown your ground beef and while it’s cooking, season it with the seasoning salt, onion powder, and A1 sauce. You want the meat mostly browned but it doesn’t have to be completely done since it’s going to cook for hours in the crockpot.

Spread the browned beef over your vegetables in the slow cooker. Take your butter and cut it into thin slices, then scatter those pieces all over the top of the meat.

Sprinkle your uncooked rice over everything.

In a bowl, mix together the tomato soup and water. Pour this mixture over the whole thing in the crockpot.

Put the lid on and cook on low for 6-7 hours or on high for 4 hours.

When the cooking time is up, turn off the crockpot and sprinkle the cheese all over the top. Put the lid back on and just let it sit there for a few minutes until the cheese melts.

Scoop it out and serve! This is a complete meal all on its own, but you could have some bread on the side if you want.

Ingredients

  • 1 white onion sliced
  • 4 medium potatoes thinly sliced
  • 2 cups carrots thinly sliced
  • 1 cup celery chopped
  • 3 cloves garlic minced
  • 1 teaspoon olive oil
  • 1 1/2 pounds lean ground beef
  • 1 teaspoon seasoning salt
  • 1 teaspoon onion powder
  • 2 Tablespoons A1 sauce
  • 3 Tablespoons butter cut into thin slices
  • 1/2 cup uncooked white rice
  • 10 ounce can condensed tomato soup
  • 1 1/2 cups water
  • 1 1/2 cups shredded cheddar cheese

Instructions

  • In a large bowl, combine 1 white onion, sliced, 4 medium potatoes, thinly sliced, 2 cups carrots, thinly sliced, and 1 cup celery, chopped. Add 1 teaspoon olive oil and 3 cloves garlic, minced. Toss until vegetables are well coated.
  • Spray slow cooker with nonstick cooking spray. Place vegetables in the slow cooker.
  • In a large skillet over medium-high heat, brown 1 1/2 pounds lean ground beef. As it cooks, season with 1 teaspoon seasoning salt, 1 teaspoon onion powder, and 2 Tablespoons A1 sauce.
  • Once beef is mostly browned, spread it over the vegetables in the slow cooker.
  • Scatter 3 Tablespoons butter, cut into thin slices over the beef.
  • Sprinkle 1/2 cup uncooked white rice evenly over everything.
  • In a bowl, mix together 10 ounce can condensed tomato soup and 1 1/2 cups water. Pour over the top of everything in the slow cooker.
  • Cover and cook on low for 6-7 hours or on high for 4 hours.
  • When cooking time is complete, turn off the slow cooker. Sprinkle 1 1/2 cups shredded cheddar cheese over the top.
  • Replace lid and let sit until cheese is melted, about 5 minutes.
