Fluffy Coconut Lime Porridge

Ingredients

  • 300 grams coconut milk
  • 50 grams rolled oats
  • 15 grams shredded coconut
  • 2 tbsp. agave syrup
  • 1 tsp. vanilla extract
  • zest from half a lime
  • a pinch of salt

Instructions

  • Mix milk, coconut, agave syrup, salt, vanilla, and lime zest.
  • Heat milk mixture in a saucepan until it simmers.
  • Add in the oats.
  • Keep heating until the mixture simmers. Make sure you stir this mixture often, so it doesn't stick to the bottom of the pan.
  • When it simmers, keep heating for 2-3 minutes until the porridge is creamy and smooth.
  • Enjoy with your favorite toppings! Some berries and extra agave syrup go super well with it!
