Sweet Potatoes

This recipe is for a tasty and healthy side dish of sweet potatoes.

Ingredients

  • 4-5 sweet potatoes cleaned and cut crosswise
  • 4 tablespoons olive oil
  • 1 teaspoon pink salt/kosher salt
  • 1 teaspoon dried thyme
  • Parchment paper

Instructions

  • Cover a baking sheet with parchment paper.
  • Place the sweet potato halves on the prepared baking sheet.
  • Sprinkle salt, dried thyme and drizzle olive oil generously on each half and place them cut side down.
  • Drizzle some more olive oil on top and give them a good massage.
  • Bake for 40 minutes or until the bottom is caramelized.
  • Serve and enjoy!
