Sweet Potatoes

This recipe is for a tasty and healthy side dish of sweet potatoes.

Ingredients
  

  • 4-5 sweet potatoes cleaned and cut crosswise
  • 4 tablespoons olive oil
  • 1 teaspoon pink salt/kosher salt
  • 1 teaspoon dried thyme
  • Parchment paper

Method
 

  1. Cover a baking sheet with parchment paper.
  2. Place the sweet potato halves on the prepared baking sheet.
  3. Sprinkle salt, dried thyme and drizzle olive oil generously on each half and place them cut side down.
  4. Drizzle some more olive oil on top and give them a good massage.
  5. Bake for 40 minutes or until the bottom is caramelized.
  6. Serve and enjoy!
