Apple Pie Bars

Ingredients
  

For the crust
  • 100 grams coconut oil melted
  • 20 grams almond flour
  • 50 grams coconut sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 130 grams spelt flour
For the apple filling
  • 2 large apples peeled and thinly sliced
  • 25 grams spelt flour
  • 40 grams coconut sugar
  • juice from half a lemon
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
For the crumb topping
  • 50 grams old-fashioned oats
  • 60 grams coconut sugar
  • 1/4 teaspoon ground cinnamon
  • 30 grams spelt flour
  • 50 grams coconut oil
  • 50 grams toasted hazelnuts crushed

Method
 

  1. To make the shortbread, combine flours, sugar and salt in a bowl.
  2. Add in the melted coconut oil amd vanilla and mix until combined.
  3. Press the mixture into a baking pan and bake at 150ºC (300F) for 12-15 minutes.
  4. Set aside to cool.
  5. To make the filling, mix the sliced apples with the lemon juice, flour and spices and pour mixture over the baked crust.
  6. Make the topping by combining all the ingredients in a bowl and cover the bars with it.
  7. Turn the temperature up to 175ºC (350F) and bake the bars for 30-35 minutes or until golden.
  8. Wait until they're cold to cut them and enjoy them!
