Ingredients

  • 10 celery stalks chopped into small pieces
  • 5 medium-sized carrots cut into small pieces
  • 3 medium-sized onions finely chopped
  • 2 green bell peppers diced into small pieces
  • 1 large cabbage head chopped into bite-sized pieces
  • 1 can 15 ounces of green beans, drained and cut
  • 2 quarts of tomato juice
  • 2 cans 16 ounces each of whole peeled tomatoes, with the liquid included
  • 1 can 14 ounces of beef broth
  • Enough cold water to cover the ingredients
  • 1 envelope 1 ounce of dry onion soup mix.

Instructions

  • Take a large soup pot and put the chopped celery, carrots, onions, cabbage, bell peppers, and green beans inside it.
  • Pour in the tomato juice, whole peeled tomatoes with liquid, beef broth, and enough cold water to cover the vegetables.
  • Add the onion soup mix to the pot and stir all the ingredients together until they are well combined.
  • Place the pot on a stove over medium heat and bring the contents to a boil.
  • Once boiling, reduce the heat to low and let the soup simmer until the vegetables are tender, which should take around 25 minutes.
