Ingredients
  

  • 10 celery stalks chopped into small pieces
  • 5 medium-sized carrots cut into small pieces
  • 3 medium-sized onions finely chopped
  • 2 green bell peppers diced into small pieces
  • 1 large cabbage head chopped into bite-sized pieces
  • 1 can 15 ounces of green beans, drained and cut
  • 2 quarts of tomato juice
  • 2 cans 16 ounces each of whole peeled tomatoes, with the liquid included
  • 1 can 14 ounces of beef broth
  • Enough cold water to cover the ingredients
  • 1 envelope 1 ounce of dry onion soup mix.

Method
 

  1. Take a large soup pot and put the chopped celery, carrots, onions, cabbage, bell peppers, and green beans inside it.
  2. Pour in the tomato juice, whole peeled tomatoes with liquid, beef broth, and enough cold water to cover the vegetables.
  3. Add the onion soup mix to the pot and stir all the ingredients together until they are well combined.
  4. Place the pot on a stove over medium heat and bring the contents to a boil.
  5. Once boiling, reduce the heat to low and let the soup simmer until the vegetables are tender, which should take around 25 minutes.
