CHEESY LOADED MEATLOAF CASSEROLE

Ingredients
  

For the Meatloaf Base:
  • * 1 pound lean ground beef
  • * 1/2 cup white onion finely chopped
  • * 3 cloves garlic minced
  • * 2 tablespoons brown sugar
  • * 1 tablespoon Worcestershire sauce
  • * 1 cup Italian breadcrumbs
  • * 1 large egg
  • * 1 teaspoon kosher salt
  • * 1/2 teaspoon black pepper
For the Topping:
  • * 3 cups garlic mashed potatoes
  • * 1 1/2 cups sharp cheddar cheese freshly grated
  • * 1/3 cup crispy bacon crumbled
  • * 2 green onions sliced (optional)

Method
 

  1. Preheat oven to 400°F. Lightly grease an 8-inch square baking dish.
  2. In a large bowl, combine ground beef, onion, garlic, brown sugar, and Worcestershire sauce.
  3. Add breadcrumbs, egg, salt, and pepper. Mix gently until just combined.
  4. Press meat mixture evenly into prepared baking dish.
  5. Spread mashed potatoes in an even layer over meat mixture.
  6. Top with shredded cheese and crumbled bacon.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake additional 10-15 minutes until cheese is bubbly and golden.
  9. Let rest 10 minutes before serving.
  10. Garnish with green onions if desired.
