CHEESY LOADED MEATLOAF CASSEROLE

Ingredients

For the Meatloaf Base:

  • * 1 pound lean ground beef
  • * 1/2 cup white onion finely chopped
  • * 3 cloves garlic minced
  • * 2 tablespoons brown sugar
  • * 1 tablespoon Worcestershire sauce
  • * 1 cup Italian breadcrumbs
  • * 1 large egg
  • * 1 teaspoon kosher salt
  • * 1/2 teaspoon black pepper

For the Topping:

  • * 3 cups garlic mashed potatoes
  • * 1 1/2 cups sharp cheddar cheese freshly grated
  • * 1/3 cup crispy bacon crumbled
  • * 2 green onions sliced (optional)

Instructions

  • Preheat oven to 400°F. Lightly grease an 8-inch square baking dish.
  • In a large bowl, combine ground beef, onion, garlic, brown sugar, and Worcestershire sauce.
  • Add breadcrumbs, egg, salt, and pepper. Mix gently until just combined.
  • Press meat mixture evenly into prepared baking dish.
  • Spread mashed potatoes in an even layer over meat mixture.
  • Top with shredded cheese and crumbled bacon.
  • Cover with foil and bake for 30 minutes.
  • Remove foil and bake additional 10-15 minutes until cheese is bubbly and golden.
  • Let rest 10 minutes before serving.
  • Garnish with green onions if desired.
