Coconut Flour Zucchini Bread

Ingredients
  

  • 1+1/2 cups Zucchini, Shredded
  • ¾ cup Coconut Flour
  • ⅓ cup Coconut Oil
  • ⅓ cup Honey
  • 6 Large Eggs
  • 1 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • ¾ tsp Baking Soda

Method
 

  1. Preheat oven to 350 degrees
  2. Spray a 9x5 baking loaf pan with nonstick cooking spray or line with parchment paper
  3. Squeeze moisture out of zucchini
  4. Combine all ingredients, minus zucchini, and mix together
  5. Stir in zucchini
  6. Place in a loaf pan and bake for 45 to 50 minutes, or until a toothpick inserted comes out clean.
