Beat eggs, milk, salt and pepper until just combined. Don't overbeat.
Melt butter in skillet over medium low heat.
Add eggs. After 5 seconds, begin gently pushing cooked egg around pan with spatula.
After 30 seconds, start gently folding eggs until custardy curds form with no visible raw egg, about 1 minute total.
Remove pan from heat just before eggs reach desired doneness. They'll continue cooking.
