Combine the sugar, corn syrup, cream, butter, vanilla, and salt in the slow cooker. Stir to combine.
Cover and cook on low for 3 hours, stirring occasionally.
Uncover and continue to cook on low for 2 more hours, stirring occasionally.
Turn off the slow cooker and let the caramel cool for 1 hour.
Serve the caramel warm or at room temperature.
Notes
- Use a slow cooker with at least a 4-quart capacity.
- Make sure to stir the caramel occasionally while it cooks.
- The caramel will thicken as it cools.
