Pumpkin Bars with Cream Cheese Frosting

Ingredients
  

For Pumpkin Bar
  • 2 cups granulated sugar
  • 15 ounces pumpkin puree
  • 2 cups all-purpose flour
  • 4 eggs
  • 1 cup canola or vegetable oil
  • 2 tsp. pumpkin pie spice
  • 2 tsp. baking soda
  • 1/2 tsp salt to taste
For Cream Cheese Frosting
  • 2 cups powdered sugar
  • 8 ounces cream cheese
  • 1/2 cup butter
  • 1/8 tsp. kosher salt
  • 1 tsp. vanilla

Method
 

For Pumpkin Bar
  1. Grease a 9 x 13-inch baking pan and preheat the oven to 350°F.
  2. Take a large bowl and beat sugar, egg, pumpkin, and oil in it.
  3. Take another bowl and whisk the baking soda, pumpkin pie spice, flour, and salt in it.
  4. Now mix dry and wet ingredients and stir well. Pour the mixture into the baking pan and bake for 25-30 minutes, depending on the heat of your oven.
  5. Insert a toothpick in the middle; when it comes out clean, your pumpkin bars are ready. Let cool completely.
For Frosting
  1. Take a separate bowl and beat the butter and cream cheese in it until smooth.
  2. Also, beat in vanilla, powdered sugar, and salt. Do not over-beat.
  3. After that pour the cream cheese on top of completely cooled bars.
  4. Cut the bars and serve!
