A delicious Mexican-inspired casserole made with ground beef, egg noodles, corn, salsa, black olives, kidney beans, taco sauce, taco seasoning, and tomato sauce. Baked in the oven for 30 minutes, this quick and easy dish is perfect for a busy weeknight.

Ingredients
  

  • 1 pound of ground beef
  • 3 and 1/2 cups of boiled egg noodles
  • A 15-ounce can of corn kernels drained
  • 1 cup of mild salsa with chunks
  • 1/4 cup of sliced black olives
  • A 15 1/4-ounce can of kidney beans drained and rinsed
  • 1/4 cup of taco sauce
  • A 1 1/4-ounce package of taco seasoning
  • 1/2 cup of tomato sauce

Method
 

  1. Preheat your oven to 325 degrees Fahrenheit.
  2. In a pan over medium heat, brown the ground beef evenly. Afterwards, drain it.
  3. Boil the egg noodles as per the instructions on the package.
  4. In a 9x13-inch baking dish, mix the beef, egg noodles, corn, salsa, olives, beans, taco sauce, seasoning, and tomato sauce.
  5. Bake in the oven for 30 minutes or until fully cooked.
